    Bacon wrapped onion rings over a little peach wood yesterday. Onion, sriracha mayo, wrapped in bacon, then hit with a little Meat Massage :D. I was only responsible for some appetizers as my neighbor provided a smoked pork loin.

    Finally got a Sam's Club membership. The first trip netted 7 lbs of pork belly (currently brining), a whole pork loin (now cut into chops and frozen) and two 16 oz prime ribeyes. I think I'm going to like their meat department.

    Since I’m making bacon at the moment - is there any benefit to hot smoking bacon? I’ll probably just throw it in my MES, turned off, with an Amazn Smoker tube and let it cold smoke. I’ve never done it but I assume it’s an ok way to smoke bacon.
