    I’m a newbie to craft beers, and definitely not in love with IPA’s just yet. But I have some in my fridge and am slowly working my way through them.

    OK. A little update first.

    Last weekend the GF and I went up to Dallas, DFW Airport Sheraton (whose exit is for Esters Road!) for the Blue Bonnet Homebrew Competition.

    2 great days. Saturday we hit up Unlawful Assembly, Grapevine, Fireside Pies in Grapevine and Collective.

    When we got back, that evening was the awards ceremony. It was kind of depressing, we did hit once on the lottery and one of our friends owned the lottery, with 4 winning tickets and walked away with a grand or so of stuff. Among that was a brewbuilt 10G pot and a "water purification" addition for a grainfather.

    So the awards didnt work our way. In particular I have a great American Porter. But they combined the style with Stouts. The only porter that medalled IIRC, was a fucking robust. Finally I got a 3rd for my Gose (v2) in Historical Styles. Then .. the GF wins 1st place in European Sour for her Solera. A couple awards later its 1st place in American Wild Sour Ale again from the Solera. They were pulled at different times, and I think 1 got Black Cherry juice and the other Black Currant juice (in the keg). At the end of the competition ....< drumroll > she took best of show with the American Wild Sour.

    10 lbs Weyerman Czech floor malted pils
    Mash @158 for 90 minutes
    3.9 oz Czech Saaz (2.2%) 60:00
    2.6 oz Czech Saaz (3.0%) 30:00
    WYeast Food, Whirlfloc 20:00
    1.1 oz Czech Saaz (3.0%) 10:00
    1.1 oz Czech Saaz (3.0%) 00:00
    WYeast 2124 Bohemian Pilsner

    The GF is doing a reverse decoction brew from hell that is taking tons of time. Its a 10g batch to go into a solera.

    I finally understand these terms now that I’ve brewed (even though it was only once) but it all makes sense to me now lol.

    Do you do a timer and go down from 60:00? When I brewed our list was hops at say 0:00 then other hops at 30:00 up until we were done.

    Yes, start at boil length and count down. If doing a 60 min boil, 60min hops would be at the start of the boil, 15m hops would be when there is 15min remaining, 0m hops would be at flameout.

    That’s what I thought. We did it the other way from 0:00 going up. I need to move and get myself a garage so I can start brewing.

    Brewing my Old Chub clone today. Pretty big beer... almost 18 lbs of grain for a 6 gal batch... 1.084 estimated OG.

    No timer, just a clock. So the first hop addition, bittering is for 60 minutes. Basically I look at a clock and see what time it is, then (in the case of the pils) add the next addition 30 minutes later. Timers work also, and are a great idea, do it on your phone and have an audible alert. Then sometimes the boil doesnt go down, so maybe I bitter, for a bit longer, and move forward the further additions. You can bitter for eons, you are getting just better efficiency/conversion of the acids with a longer boil.
    You can also bitter in the mash kettle, or first wort hops in the brew kettle, pre boil as the wort is being transferred when you sparge.

    Yeah it wasn't bad. A lot of it was on beer styles. A little bit on proper pouring, cleaning, off flavors and sales laws too. What's your reason for taking it if you don't mind me asking
