The upside - it becomes easier - My wife has celiac and my kids are both sensitive to gluten, although not completely celiac. In the beginning it was really difficult, but now that we are used to it we can cook almost anything. There are acceptable options for pizza, pasta, bread etc. that's made with rice, tapioca, etc. It does not taste exactly the same as the real deal, but you get used to it, and once your whole pantry has been converted to GF it becomes easy to just use what's there and cook just about anything you want. The most difficult part is to identify the hidden gluten - for instance most BBQ sauces are not gluten free because they use wheat as a thickening agent, and also some of the vinegars are barley based vinegar which contains gluten. We have a cool phone app that we can scan the bar codes and it will indicate if the product is GF, even if it does not specifically state it on the packaging.

Great info. & Yes, I’m certainly not alone. Just found a source for gluten free soy sauce, problem is I went back & it was gone. Not sold out, just gone. So you gotta be like a shark & be on the hunt all the time.

Got a bird in the crock pot (technically half a bird; last year's Cornish X got to be nearly turkey-sized before I was able to get them in for slaughter so I had them halved) for supper tonight, and the leftovers will be chicken soup for tomorrow night. Brined this bird, and he's cooking in beer with a chopped up onion & sprig each of Rosemary & Thyme. Should be delish.
