    This is the BFM Abbey du Saint Bon Chien clone from American Sours by Michael Tonsmeire.
    I put the wrong hops in, it should have been 1 oz of Galena. Oops. Fuck it. I decided to use some Azacca for the rest of the alpha and some flavor. Like its going to survive the bacteria anyways!

    Right now I am mashing beer #2, his Bourbon Barrel Cherry Dark Ale.

    Not quite his recipe, I am making a Belgian Quad.
    I will use Fuggles and Saaz for this, and the half oz of the EKG that survived my previous error.


    8 lbs. Czech Floor Malted Pilsner (thank God the end of the bag I bought last year to make Czech Pils!)
    5 lbs Belgian Pilsner
    3 lbs Munich
    8 oz Special B
    10 oz Aromatic Malt
    12 oz CaraMunich Malt
    2 oz Chocolate Malt

    .5 oz EKG 120:00
    .5 oz some remnant 120:00
    .5 oz Czech Saaz 15:00
    1 lb Brown Soft Candi Sugar 15:00


    Primary
    Wyeast Belgian Abbey 2, 1762
    1 bottle Dark Candi Sugar Syrup

    Secondary
    Brett Clausenni
    Cherries
    oak soaked in bourbon

    Initial mash was 148, I decocted it up to about 155. I figure that is good enough.

    So the latest BYO has an article on making Trappists by some Dallas guys that pulled medals at NHC (National Homebrewing Competition) last year. So they say add the candi syrup to the ferment, after it slows down. That way you dont stress the yeast and you can retain the aromatics. I will try that for both these beers.


    I didnt have a real meal yet, I am on my 4th IPA, I have had 2 22oz waters, and have some dinner slow cooking while I make it through this beer day.
