    Hard to describe, more of a "red sauce" style, if that makes any sense. No avocado, a facepunch of cilantro, more peppery and tomato-y. Shrimp only too.

    Sounds about right. I'd be willing to bet if you threw all the ingredients minus the seafood into a blender it would make a wickedly delicious salsa.

    Next time try cochito (triggerfish). I went fishing in rocky point over the weekend and we made ceviche with some of the fish we caught. I can easily say it was the best ceviche I've had!

    Don't know about canyon. Going to have to read the reviews, are you going to expo this year?
    Going to keep that in mind! I've read that some people use swordfish in it and octopus too.

    Yeppers, going to expo on Friday for sure, maybe Saturday too. Bought a canyon 75 last year for the price of the 55. Came with a six pack of beer... on top of the beer @llibrm and I drank while deciding to buy it. Canyon Cooler is out of Flagstaff.

    Friday is free beer day at expo
