    Probably not something I will buy again. I feel like it either needs more strawberry or less. It’s just enough to give it a weird taste.

    beer weekend!

    OK, so at our local Houston homebrew shop, Defalcos, there was a Pros vs. Joes.
    The style was ESB. A local club the KGB (Kuykendahl Gran Brewers) hosts and event called Big Batch Brew Bash, and ESB is the style.
    I wasnt one of the Joes, but I brewed a 10G IPA, split into 2 different batches.

    So the first was a crack at Ron Mexico. This is based on the experimental Hop HBC-438, which was sold a year or so ago raise money for ALS.
    So I saw that Vinnie Cerluzo (Russian River) made a brew for last years NHC (National Homebrew Conference). Here is his recipe.

    His recipe is interesting, its in percentages. When I worked it out in BeerSmith, for 5G I came up with
    5.5 lbs Domestic Pale
    4.25 lbs 2 Row
    4 oz Acidulates
    4 oz Cara-Pils
    1 oz Crystal 60 (1 oz? WTF?)

    .2 oz HBC-438 90:00
    .4 oz HBC-438 15:00
    3.4 oz HBC-438 05:00
    3.25 oz HBC-438 day 10
    3.25 oz HBC-438 day 15

    I was gonna follow it, but then said fuck it. I am trying to work on a standard IPA base. So I decided to use that instead, double it up and do 2 hop bills.
    But I would use his hop regimen, or most of it. But I'm not going to jerk around with an oz of Crystal. And I want some other things.
    Then issues sourcing HBC-438. I have 5 oz, I forget where we got it. I cant get more, neither can my store, unless I want to pay 4.99/oz, which is what MoreBeer has it for.
    Fuck that noise.

    So to continue

    RO water w/ Chris Colby IPA water treatment to make 15G water.
    6 g Gypsum/3 g Epsom/6 g CaCL/3 g Chalk
    Half in mash, half added to initial kettle.
    I also added 3g extra CaCL for mouthfeel.

    I want smooth tasting IPAs, so I am also going off the reservation and adding Flaked Oats.


    (10G IPA)
    11 lbs Maris Otter
    6 lbs Domestic Pale
    1.5 lbs Light Munich
    1.5 lbs Torrified Wheat Malt
    1 lb Flaked Oats
    8 oz Acidulated

    OK, So I then screwed up the mash, it was too low, I was adding more water, but I figure I never got over 140 or so, maybe 145. I was vorlauffing and it was milky and the temp was low, and shit. Time to decoct. I pulled maybe 3 pounds off and added it back after 20+ minutes when it was simmering. Better, I got up to 160.
    I gave it a half hour then started sparging.

    Oh, and I forgot to PH adjust the mash water. But I was using a half pound of Acidulated so I think I was covered.

    I collected about 14G, then started it boiling in my 22G Brewbuilt. After a bit when it was going I moved half to a different kettle.

    So Ron Mexico Hop bill

    .25 oz HBC-438 90:00
    .75 oz HBC-438 15:00
    yeast nutrient, whirlfloc 15:00
    3.0 oz HBC-438 05:00

    OG 1063

    I have one more ounce of HBC-438. When the krausen falls I'll add it.

    And <drumroll>

    Fractured IPA

    1 oz Chinook 13.4% 60:00

    .5 oz Mandarina 7.3% 20:00
    .5 oz El Dorado 12.8% 20:00
    .5 oz Comet 11.3% 20:00
    .5 oz Galaxy 17.8% 20:00
    .5 oz Topaz 16.1% 20:00
    .5 oz Citra Cryo 25% 20:00
    .5 oz Mosaic Cryo 24.1% 20:00
    Yeast Food
    Whirlfloc
    .25 oz Mandarina 7.3% 05:00
    .25 oz El Dorado 12.8% 05:00
    .25 oz Comet 11.3% 05:00
    .25 oz Galaxy 17.8% 05:00
    .25 oz Topaz 16.1% 05:00
    .25 oz Citra Cryo 25% 05:00
    .25 oz Mosaic Cryo 24.1% 05:00

    OG 1058
    London III Wyeast 1318

    Dry Hop
    .25 oz Mandarina 7.3%
    .25 oz El Dorado 12.8%
    .25 oz Comet 11.3%

    .25 oz Citra Cryo 25%
    .25 oz Mosaic Cryo 24.1%

    When the Krausen falls, I'll add the remainder of those hops.

    The yeast is half a liter of the yeast cake from a Session IPA/Pale Ale for each beer.
    Between the 2 boils, I didnt end up with the same OG.

    So today was a bunch of brewery work.

    We are trying to get a bit more efficient with March pumps and quick disconnects. So have been fitting all kettles and equipment (sans lines) with female 1/2 inch NPT QDs. All lines will have 1/2 barbed male QDs.

    The GF made a Wee Heavy, using the yeast cake from a Scottish 85 which used Wyeast 1728

    This is her Wee Heavy
    20 lbs Maris Otter
    .5 lbs Munich Light
    1 lb German Crystal 40L
    .5 lbs Canadian Honey Malt
    .25 lbs Crystal 125
    .25 lbs Pale Chocolate

    Hey! That's a lot of grains! How about I make a mild out of her 2nd runnings?

    So I got 8 oz of Simpsons Double Roasted Crystal, tossed it on top of her grains and started sparging.

    She had .5 oz leftover EKG and .5 oz leftover Fuggles so I used them also.

    I ended up with a 1037 OG, and used the same yeast.
