    Mike - Heat shield vs water bowl?
    What heat shield for the 22 WSM? If you wrap in foil why bother with a corrugated shield - the foil blocks air flow...Did I miss something?

    If you have the 22 your fine, just use the water bowl and foil it. The 18" water bowl on the newer WSM crowds the room between it and the coals. On those your better off using the heat shield with foil to provide more room for coals. And it is easier to add coals if you need to also. The aluminum foil is just to make it easier to clean. Pull it off and put a new layer of foil on next time.

    Plenty of room now. But seeing how you have the 22 your set with the stock water bowl :thumbsup:

    No need for sand, clay saucers or any of that other stuff. Or water IME except to mist the meat if you need to from time to time. But not until the bark has set up firm.

    Doubt I'll be able to find the picture, but I've stacked a second grate in my 22" kettle before. Once some expanded metal in the center that was wrapped in a circle and wide enough to be stable. The other time with three empty tomato paste cans :laugh:. I did it to cook extra chicken thighs and it worked out just fine!

    I hung a regular 32" Samsung LCD TV on my in-laws' back patio a few years back. It is a ceiling mount that I ran up through the outdoor 'ceiling' and mounted to some wood I secured to the studs up in the attic space. It is covered overhead, but still faces the wind, temp swings, and occasional light moisture. That thing has never skipped a beat!

    I use the papasitos copy cat recipe. Papasitos is a local Mexican restaurant here that serves some bad ass fajitas.
    I added 1/4 cup of beer to the recipe. I marinate for two days. Then I just sprinkle a little bit of the fiesta fajita seasoning once I start grilling.

    My poor Traeger is getting cobwebs lately ... compared to the stuff my brother is putting out with his homemade rig, it’s not even worth me trying anymore.

    I helped him with this cook last night: 110 lbs of pork, 120 lbs of brisket. Wish you guys could’ve tasted it!

    marinating in pineapple juice can wreck some meat and give it a funky texture. the bromelain in it acts as a meat tenderizer that tenderizes by starting to digest the meat. you can neutralize it by microwaving the juice. being that you referred to canned juice, it probably is fine, but using fresh pineapple and/or pineapple juice can do weird things to food.

    i think the canned stuff is pasteurized so it doesn't spoil in the can, but if you buy a bottle of it, it may be an issue.

    Interested to see the design. We have a 48" sitting around I would love to put outside. Problem is, no roof, only a pergola out there and I don't think I really want to put a roof on the pergola.

    Never a bad deal there. Love seeing smokers packed to the vents like that. Can't wait to get something on the smoker soon. At the rate of unpacking right now, next weekend is a possibility :fingerscrossed:
