    Man, I'm hoping I can buy in large quantities again! I have been going bag by bag for a little while, now, trying to hold off for the Memorial Day sale. Time to pick up another couple hundred pounds or, as @scottalot puts it, a start :laugh:.

    The stuff that is made that way is the best. I remember when I was young, my family is from Kentucky so we spent a LOT of summers there. My great uncles and my gramps and some cousins where out back at my great uncles house sippin on it out of the jug. I smelled that stuff and it burned down my throat. :)

    Do you guys inject your pork butts? The one I made the other day tasted great and pulled fairly well (I should have left it on a little longer) but it didnt have a lot of flavor. Not enough rub? I didn't spray it throughout the cook either. Good smoke but that's as far as the flavor went.

    I have one of these and it's very nice. I was using one like a 2 gallon weed sprayer for when cook whole sides of beef and whole hogs. But like a dummy I set it on the fire box and went to do something and yall can guess what happened. Yes there might have been some intoxicating beverages involved. Anyway Thanks for the ideas.

    I used to but now i just rub them and cook them hot and fast. I spray them every 1/2 hour with apple juice and wrap with apple juice.

    Check around at plumbing supply houses. I get 40# bags of Nature Glow (Royal Oak branded for restaurants) for around $25 a bag.

    After years of using only lump charcoal and recently trying 2 bags of Kingsford I can honestly say you couldn't pay me to use Kingsford. When you light it, it smells like a trash fire mixed with burning dirty disposable diaper. For the record I used a heat gun to light it so there was no off smell from the ignition source.

    Well lets see. I rotisserie one beef clod that took a whole bag of Kingsford diaper blend briquettes . The other bag I used for a couple harrow disc cooks so I'm going to have to go with 4 times I burned diapers.

    A couple of days ago I put a skirt steak in to marinate with Aloha Teriyaki sauce. It’s my favorite teriyaki because it’s not salty but it still has a lot of flavor.

    Today it went on to smoke for about an hour, then I fired up the Weber Genesis for the first time in many months and gave it a proper sear.

    I may have to start searing like that more often, because it was fantastic! Usually I just turn up the heat on the Traeger toward the end of the cook and call that a sear, but it was a pretty big difference putting the meat on 650F+ hot grates for a few minutes. Well worth the effort!

    I actually found skirt steak at Costco on Sunday. It is marinated in the package so that means it has enzymes to help tenderize the meat. About the same price as the butcher shop, be interesting to see how it turns out. In a couple of days the expiration date isn't until August WTH!! Agree, nothing like a good sear. And even with a sear station burner on my Genesis it leaves me wanting after cooking directly over hot coals :anonymous:

    Caught a lot of salmon (King and silvers) in Wa. State when I lived there. And made a lot of camp fires with Cedar. Never thought to put the 2 together. This I will be doing again. And again.
