    Rightfully so! My wife went into a docotrs one time and I was in the waiting room. 30 minutes late, the doc opened the door to office and called her in. I said loudly "there's not even another patient in there, why the wait?!" I swear it's a power trip thing.

    Heck Ya!!! If you want it on a trailer keep your eyes out for some 15" custom rims and tires, they are getting hard to find used. I got a set of aluminum spokes like the ones in this picture they got 50's on them and would look bad ass. I can save them for you if you like them. Just have to stretch the fender to fit.

    Sometimes I do multiple heat zones by changing the exhaust/intake configurations
    Just helps me keep an eye on things lol

    This smoker was basically a freebie but I’ve learned a lot from it that I will incorporate into my next pit should I ever see the need :)

    I am LOVING this hanger steak. I think the butcher shop I get this from could set one or two aside for me everyday. I don't get the sense that they are in any real demand. I sent an e-mail and got one the next day, no problem. I'm thinking I'm going to try and get each one they get for a few weeks in a row, then stock up. At $6.99/lb, I have never had a better value in steak and at any price, I'm not sure I've had much better, either.

    Sorry for no progress pics, but it was reverse seared. The sear session went caveman style directly on the coals.
