    My Old Country Pecos came with a semi-solid piece of plate steel as the fire grate. In addition to that I came with a grate to cook on in the firebox.


    I took the semi-solid plate steel and moved it over to the main cooking chamber, serving as a tuning plate. It helps run the heat/smoke beneath the span of the cooking chamber a bit before allowing it to rise into the chamber. The net result is that it helps balance out the temp ranges throughout the grill.

    I use the firebox cooking grate as the actual fire grate. Seems to be working out just fine so far. Zero additional cost to solve this issue.

    Yep this, no soak. Oh wait, I used to soak, then no soak, then dust maze, now I’m on a pooper kick. I may have a problem. On that note, I just dry brined a couple of small ribeyes for Friday evening cold smoke and sear session.

    Big ole nasty one. He likes to kill them dead so he can take pic's. I piss him off when we hunt together cause I put a big round through the guts and let them run off. They tear the hell out of my land and fields.
