    It rolled thru Katy last night, lit up the sky beautifully but no rain. Hell, no thunder, just light show.

    That may be a good excuse to keep the gasser :anonymous: Although you could certainly use the kettle without power too.

    Those ribs looked pretty darn good to me, think your going to be happy with that new smoker if your not already.

    Was tired tonight just came off a week of on call and typical hectic Monday. After work realized still had half a skirt steak marinating yet from a couple of days ago. And corn that needed cooking. 20 minutes on the Genesis was done with both. And tasted pretty good to me better than boiling corn and cast iron skillet steak on the stove. At least to me.

    At our local grocery store can get a to go container of smoked brisket, pulled pork, or rotisserie chicken for $7. Smoked. But the skin on the chicken is going to be soggy by the time you get home. And the flavors they inject are not what I would use. Similar story with the pork. I have been known to get the brisket before however :oops: I don't have much use for 10 pounds of left over brisket and for what ever reason when I freeze it takes a year for me to eat it.

    And they don't do more exotic things like pork belly on a roti like I did yesterday. Or turkey. I really like the skin on both birds fresh and crispy of course. And my injections and seasonings better.

    I got one of those $5 Costco roti chickens everyone raves about not long ago. And not sure what everyone is raving about. Not trying to talk you into one, only you know what you would and would not use it for.

    Still no power. They said 11 but now it's unknown...

    .

    No tube. Had a nice thin blue smoke rolling the entire time. I'm impressed. The smoke taste was just about perfect.

    Weber will still be used with regularity. Can't kick it to the curb :D

    I think they finally got their power back 2.5 hrs ago (about 4am)

    But that’s the good thing about charcoal grill. If I lost our power, I would just smoker all day and drink some cold beer (get ice from the gas station since fridge willl be down too )

    Was around 230-300 when it came back. Hung out with the neighbors in the driveway with coolers of beer last night. That and I ate some ice cream as a preventative measure early on :D

    Spotted a couple cotton tails yesterday. Any good ideas on smoking? Have not done those before and did not bring too much in spices. Wont pop 'em if I can't use them.

    Yeah, I usually use sherry wine and bake. If I pop the anniversary bottle of Dom P for rabbit, I don't think they will find the body...

    We would pan fry squirrel and rabbit or cook in water and pick the meat add dumplins like chicken and dumplins which is like a stew.never tryed any on the smoker!feed back would be good if you try it:thumbsup:

    Don't eat cotton tails much anymore like I used to but every once in awhile will take one as a target of opportunity when bird hunting. After shooting them I always throw them in a fork in a tree so ground eating critters can't get at them and pick them up on the way back out of the woods. As they cool down the fleas and ticks will get off the body. If the liver is white or spotted it is a sure sign of tularemia, toss it. Although you can pick it up just from skinning them if you don't wear gloves, wash your hands thoroughly with bacterial wipes if you have them if they have spotted liver disease.

    Never smoked them but grilled a lot of them, and tree rats. Bunnies split down the backbone and grill like chicken over low to medium heat. Squirrels got spoiled used to shoot so many only ate the legs. Damn squirrel hair is magnetic and likes to attach itself to the meat seems like no matter how you do it. Both I soak for at least a couple hours in salt water (brine them) then grill over fairly low heat, don't need much in the way of spices at least I never did. BBQ sauce on them toward the end takes them over the top though. And of course there is always stew when shot up badly if not using a rifle taking head shots.
