Light base layer of SPG and a light top coat of PF. Will dust it before going on tomorrow.

Burnt out ends were good, not outstanding. But I might be over critical myself, everyone else ate them up. No pics, beers were flowing a long time before they were done.

I think they walk the cows to NC which drops the weight and triples the price....

I GSP most everything anyway, so its not a far departure from norm, that i have the PF on hand makes it that much better.

The zucchini you saw in earlier post was olive oil and GSP, my 14yo daughter got a bit happy with the black pepper.....

For that price, may as well stop by Costco and get a prime packer. I think they’re $7.99/lb.

Geez. Even the Alaska Costco has prime brisket for $3.29/lb. Too bad it’s over 200 miles from where I live...

Mine is about to go in. The girls let me sleep in a bit :D.

My oldest has been helping me prepare the pit. She's learning some of the unglamorous parts of BBQ .

    I'll have a pic shortly.

We'll call it warm and brisk :D.

275*, it's injected, and I'll wrap in butcher paper. That makes for a relatively short cook without going hot and fast.

One of the other cooks did one yesterday in 4 hours. Three hours in the pit and one resting. It was only 5 pounds of meat, but still! Seems like it turned out pretty decent.

    Here is mine.

Pretty thorough trim, injected (I'm doing this a lot, now), and rubbed with this (has lots of Meat Massage elements to it):

Oak and pecan in the drum. Now we wait!

Very nice. Saw that fast one on FB. Looked great.

Kind of wish I started mine at midnight so I can eat sooner
