To me that defeats the whole purpose of Picanha. Well at least they way I want to cook it.

Yeah Snake River Farms sells it with the cap off also. At $75 for 2.5 lbs. they likely figure most people don't want to pay that much for fat.

I'll have to get quotes and see who'd all be interested! Plus in November I'm going back to nebraksa for hunting and they have full prime rib primals for 4.99/lb! I'll be taking advanced orders on that...

    Yeah mine too.

So once again doing a search for mail order steaks and one of the first posts come across is Costco selling top sirloin cap steaks. Yep that is what I by for my youngest son LOL and somehow went right buy me. He likes his meat cooked well done and not going to waste money on expensive steaks and he doesn't like fat in his meat anyhow. Yes there is something wrong with that man but that is another story. So now you have me wondering if they could leave the fat cap on for me... Thank you good sir!! Doesn't hurt to ask.

The first one I bought came vacuum sealed and the young man said they only get few in each week. Not to rain on your parade but I don't think it's an option maybe the Costco guy can answer that too. @bern_10

Depends on my mood at the time, but generally cut into smaller blocks. Also the cheese type will dictate, as some are not easy to cut into smaller blocks. I did a three year old cheddar, and tried cutting to blocks, but it’s texture was crumbly, so I left it whole.

Couple of rib eyes on Father's Day, did some asparagus once the steaks came off and had a great potato/herb salad.

Picked up 2 pork shoulder blade roasts on sale for $1.99CAD/lb to put in the freezer. Heading to the cottage for the weekend, but next weekend I'll be pulling one of them out and maybe some more beef ribs I have stashed.

Too poor to list anything interesting.
My buddies are coming into town this weekend to sell their mangalitsa-red wattle crossed pigs. Hope to pick up some deliciousness for smoking. Anything I should give a try aside from ribs & shoulder?
