In the process of ordering a u bolt flip, but don’t want to put it on until I get Dakar’s. Which could be a few months, but I will if I have to. Trying to avoid re using the u bolts.

Hard to say without seeing it, but I'd probably go with what what @whitedlite said.

 

At work we never let anything go that doesn't have at least two threads sticking out past the nut.

At home I ran my truck the way yours is for about a week when they sent me the wrong U-bolts. Just make sure you lock-tite and torque them.

No. Rather than having the lower bracket straight, bend the ends up, that way if the rack does sag down with weight the bolts won't touch.
