    That's almost the exact same recipe my grandmother gave me which she got from her mother and so on. Except we add a little garlic to the chicken and cook it low and slow like a stew before making the gravy and putting the dumplings. We use the whole bird in ours though incl. the heart, liver, gizzards, neck, etc. Reading this made me hungry for chicken and dumplin's now!

    Just get some ISP seats! Shit this thing is going to be Truggied out before we know it. I can attest they hold up well with being pelted and soaked with water, mud, rocks, and whatever else gets thrown up by the tires.

    Funny story I need seat covers also since almost every wheeling trip I leave a window open because my co-pilot is an instigator and wants to bomb every mud puddle. So I inevitably end up leaving a window down by accident. The last mud puddle she got some on her it got all the way to the middle of the back seat. I got yelled out about leaving the windows down and was scolded and told not to do it again. Funny how my 5 yr old is starting to know more about wheeling than most guys I take out or go with.

    Yea, it's a old family recipe and will obviously taste better if you make it from scratch but you can cheat too. Make some gravy, get some stuffing mix, make stuffing balls, boil them, add some meat. That's basically it. Being in Canada and from French descent I would not expect you to start with anything less than a proper Roux though :thumbsup:

    We grew up poorer than most so my Grandmother had to stretch the meals. Sort of like White Trash Cooking cookbook says about portion sizes that most recipes serve four........

    This is kind of how we were raised, with just enough for everyone and always room to add more for the unexpected guest. I'm happy to share the recipe. Who know, some day someone might be posting that it is a 200 year old recipe.

    Yea, I am sure there are hundreds of variations of this recipe. It's really really good with pot roast and brown gravy. My "Mom-Mom" use to make sour beef and dumplings a lot too. No one really like the softer, traditional flour based dumplings so she would use the bread stuffing instead. I have made just the dumplings to take to parties and the mains get forgotten they are such a hit. The only down side is, it is like eating a bowling ball. These blow up in your stomach! Eat three and you are down for the count. :D

    And yea, I will eat the meat off the neck, back and even the last part that went over the fence off a chicken. I grew up eating gizzards, livers and hearts. I tell ya what's good. Battered and deep fried chicken livers that braise in a thinner brown gravy. OMG! You can feel your arteries closing but Holy Sweet Baby Jesus is that a treat. I'll also take a chicken thigh, bone and all and put it between two slices of bread smothers in hot sauce. I'll eat right around the bones.

    Damn, now you made me starving too!!!!!!:hungry:

    :annoyed: Dang it Jaime! I may take them off Thursday. The deciding factor is if I can get someone *cough* @twheat40 to come over and help me put them back on. I may be able to do it alone with the help of a floor jack, but It's unlikely.

    How about two ratchet straps draped over the roof that your could secure the top of the door frame to? I would be curious too if the existing hinges aren't spring loaded so when you take those doors off, you might want to be sure to have something to keep the hinges open, so when you put them back on you can get the hardware in. Never had a door off before but my guess is, it's not as easy as Jeep setup.

    It's definitely not as easy as a jeep. Their doors just drop into place with a pin. Ours is a few bolts. That's a good idea with the straps though and could very well work. The only difficult part would be that the door would be held in the closed position, so accessing the bolts would be a pain
