    I have to do cast iron because my $15 Walmart charcoal grill doesn’t keep consistent temp and I don’t have room for anything else right now.

    Season steak with salt and pepper and leave on counter for 30-45 minutes covered.

    Preheat oven to 425. Get the skillet smoking (high heat) and toss in olive oil/steak, 1 min each side (30 seconds on ends). Turn off heat and add 2 tbsp butter, spring of rosemary, a few sprigs of thyme, and a few smashed garlic cloves. Baste for 30 seconds and place in oven. For 1.5 inch thick steak, 4 mins each side for medium (flipping and basting before putting back in).

    Topped it with cherry tomato, onion, red wine vinaigrette (with salt, pepper, garlic), and bacon jam.

    Still working on the crispy baked Parmesan broccoli bites

    Sear it first for a minute each side and 30 seconds on the ends. It continues to crust up as you baste and oven cook it.

    Reverse sear is smoke steak slowly until internal temp of 110-115 then sear. Basically cook first, then sear.

    That's an EC225 Super Puma. The most expensive civillian helicopter in existence. Coincidentally, they have week main gearbox mounts and have been grounded until getting mounts swapped out at the nearest approved maintenance depot. Probably on its way to have surgery. the "G" on the starting of the registration denotes it was last registered in the UK
