I was being a good friend and offered to smoke it for them. But I can’t do it last minute notice and during my work hours.

Too bad i could have smoked them this with some pulled pork

My wife will probably kill me since I just picked up the Smokey Mountain earlier this week but a 6 burner Weber Genesis just popped up for $100... How do I pass that up?

Tuesday had blood work done in the morning and by the end of the day my primary care Doc sent me a message. Said everything looked good and keep up the healthy lifestyle  So when I got home took out a capsteak and a couple of others to thaw.

They really needed to be grilled tonight, 99 deg. heat index and T-Storms all around. Not a big deal though really could do without the heat and humidity.

    seasoned.jpg

Some cherry tomatoes and bacon with carmalized onions on the side.

    plated.jpg

Best blood work results I always have are when I eat a lot of protein and fat. Without carbs. But damn I could go for some ice cream right about now.

Ice cream and some of those pineapple spears you grill...

I also do better without carbs so that makes my mouth water.

Fresh pineapple spears with brown sugar still warm with ice cream on top. Done it twice now and OMG...

It is a fine line. I posted this in the 50+ thread awhile ago but it is also applicable here I think-

I recently turned 65 and had to choose a new primary care physician for my Medicare program.
After two visits and exhaustive lab tests, he said I was doing "fairly well" for my age.
A little concerned about that comment, I couldn't resist asking him, "Do you think I will live to be 80?"
He asked: Do you smoke tobacco or drink alcoholic beverages?"
"Oh no," I replied. "I don't do drugs, either."
"Do you have many friends and entertain frequently?"
"I said, "No, I usually stay home and keep to myself".
"Do you eat rib-eye steaks and barbecued ribs?"
I said, "No, my other doctor said that all red meat is unhealthy!"
"Do you spend a lot of time in the sun, like playing golf, sailing, hiking, or bicycling?"
    "No, I don't," I said.
"Do you gamble, drive fast cars, or have a lot of sex?"
"No," I said. "I don't do any of those things."
He looked at me and said, "Then why do you give a shit?

Ok, gotta know about the pineapple spears! Had grilled pineapple at a Brazilian steak house one time and it was awesome. Would like to try doing them myself. Details?

This video is pretty much exactly how I cut the spears. She doesn't start until about a minute into it though.

Then I put the spears on a plate and dump brown sugar and a little cinnamon on them. Let them sit for about 10 minutes and put them on the grill. Only need to cook them for about 10-15 minutes depends on how hot your cooking. I have them sitting a plate ready to go on when I think everything else is getting close to done.

Brown sugar caramelizes just a bit and they get warm all the way through and are awesome. Damn just ate and now I'm hungry again.

It took me 30 years to realize I love pineapple. My parents were the worst they only bought canned pineapple.

I'm going to have to try the pineapple spears. Only problem is that I eat the whole thing after I cut it.

I'm got a movie on so I watched it on mute. Couldn't hear what she was saying, but damn, I'm buying whatever she's selling! Yum. Oh, the pineapple looked good as well.

I'm going to do my first run on the WSM tomorrow. I figure I'll just do a pork shoulder since they're cheap, tasty, and hard to screw up. What is the tired and true method of running a WSM for a long cook like that? I'm assuming its a full unlit chimney of briquettes with 10 or so lit ones on top? I would love to hear anyone's insight.

mats, flaps, and stickers. Extang solid fold 2.0. Mobtown sliders and full skids. AVS vents
You may need more than a chimney, depending on the size of the butt, could take 12 hours or so.

I normally fill the ring in the 18.5, and put a quarter of lit on top. I also use the water pan.
