    Pork shoulder rubbed down and wrapped along with about 3.5 pounds of pork belly cubed up and seasoned ready for the new smoker in the morning.

    Nothing fancy, but I know how these turn out on my charcoal, electric and propane smokers so it'll be a good comparison to the pellet smoker.

    I have access to both Sam's and Costco. I have yet to buy any meat from Costco simply because Sam's is cheaper on the things I buy.

    I avoid sams on principal... I hate walmart :rofl:

    but excited for pork cube pics! and curious as to your comparison from the various fuel methods on the pork.

    I've found that propane smoker is meh... charcoal with wood chunks is amazing, and the pellet pooper is subtle but delicious. Still contemplating a smoke tube for an extra kick. But, the pooper still produces a nice smoke flavor profile and ring (which means nothing I know, but still so purdy to look at)

    paired with some strawberry cream cheese and bacon jalapeno poppers... oh my...

    but the cutting board really sells it :spy: :D

    still waiting to meet up again for a smoke and a drink. glad ya stopped by the other day ish and put a face to as my wife calls it... "my crazy obsession" :rofl:

    First... Get the smoke tube... I have the 12" one for cold smoking cheese and butter (and anything else I can think of) it'll last about 4.5 - 5 hours which is plenty for cheese.

    I have this thing set on smoke setting right now (figured I'd hit it with smoke that first hour then crank it to 225) and so far I'm not seeing as much smoke as I had hoped.. but it's an experiment like every thing else I do.

    As for Walmart/Sam's just for example they had whole brisket s for $3.09 a pound yesterday... That's cheaper than Costco. Everyone has their principles and I respect that. I'm just lucky enough to live in an area with choices.

    Pork bites are almost done... Yes I cheated and used a jerky rack out of my Smokey Mountain propane smoker which happens to be the exact same size.

    Transferred them to an aluminum pan and sprinkled on some brown sugar ... Back in the smoker to melt down.
