    There’s smoke at any setting because it uses the pellets for heat, not the electric heating element that only starts the fire. You aren’t looking for thick choking clouds of smoke, just thin blue smoke.

    Yes, smoke 1 hour, then 2/2/1 at 225 will be fine.

    Ha ha...thanks, man! Turned out killer. That beef rib meat is terribly underrated, I think.

    I took a few pictures and figured they didn't do it justice. I just stared at it for a little while :laugh:.

    I feel like it's been a month since I've done a proper cook. Felt good getting out there again. I better shape up - we have some hungry people to feed August 18th ;).

    Listen to @Kremtok . I don't have a pellet pooper, but even with stick burners, the good smoke is the one you barely see.

    Yes it must be a regional thing, I can buy Top Sirloin in the IBP Choice cryovac bag, same as the Ribeyes and Strips, direct from the box, and they always have tri-tip at any grocery store.

    I was a Sophomore in High School in La Crosse WI for the blizzard of 1978.

    I never heard the term FIB until college UW-Platteville from dorm mates that lived nearer the Illinois border who had more exposure to Chicagoans.

    37" FTW... But damn are they spendy... slow 'n sear even makes an RKE edition. Which is also spendy. I'm sure if one pops up locally for sale I'll see you post it in your backyard :rofl:
