    Got called in late last night. Fan inside walk in freezer icing up. We have high humidity and the chef decided it was time to prop the door open on the freezer while he cleaned it out. Instant ice. Then fan goes out of balance. My suggestion? Turn off freezer to allow ice to thaw. Chef doesn't like that idea. Fan "de-blades" itself. Now it's off...until I can get a new fan.

    Good news is, the ice melted.

    After 9-1/2 hour day, I was here from 8:30pm to 11:45. Slept in a bit this morning. Chef still isn't here. He'll be tossing a lot of product because he couldn't listen.

    This is my world.
