    These days it's just an UDS that I welded some ballvalves into for adjustable intakes. Rolled my own basket. Brisket I use lump. Pork I use charcoal. The lid has 2 holes. One for the Meat probe and the other for grate Level temp. Wireless thermometer so after a few hours I can take nap.

    Yeah shoulders take forever and the stall is rediculous at times. I'm right there too for time. My brisket seems to be more consistent with cook times / lbs.

    I like the basic woods . Apple, pecan, and cherrywood. First two for pork and the last for beef.

    I am using a Green Mountain Grill pellet smoker and I love it! I usually use competition blend or a 50/50 blend of a fruit wood with mesquite or hickory depending on how I am feeling.

    Morning everyone, taking my bathroom door frame/casing apart so our new washer will fit through. The standard size for machines has got bigger over time. Thought I could get by with just taking the small trim off but I need to come up with an extra inch or so.
