    You can smoke small quantities on a kettle. The wsm is for longer cooks with more meat. You can't fit 2 whole turkeys on a 22.5 kettle. The mini wsm is for intermediate cooks. It's way more fuel efficient than the kettle. Half a chimney lasts 4-6 hours. That's perfect for a small butt or chicken quarters.

    I've smoked on my kettle numerous times, but it's just not the right tool for the job. They are leaky and harder to control the temp on. They are very effected by the weather and wind.

    I've had stellar experiences with the customer service from both Kamado Joe and Weber.

    If I decide to add a pellet grill at some point then I'll go with Rec Tec and likely get excellent support, too. Several guys at work have the Rec Tec grills and they all said that the concern level with getting their few issues resolved was unbelievably fast and thorough.

    It sure is refreshing.

    Too bad this type of response doesn't carry over to other goods & services with other industries. Kimber firearms, for instance....horrid. I'll never buy another one. Same with Taurus or Smith & Wesson firearms. Springfield Armory....very much on par with Kamado Joe & Weber....great response from them.


    Etc, etc.

    Customer Service goes a long way.

    Threw this guy on last night, my buddy’s wife really liked the last brisket we did, so he just went to Costco and bought one for me to cook. Looking good this morning, just trying to decide if I am going to cube the point for burnt ends or not. I’m a little bored so I probably will. how do y’all do burnt ends? Just cube and put in a pan with more smoke for a couple hours? A little sauce at the end on half of them?

    2 hours in on a 14 lb prime brisket. Was $3/lb at Sam’s, which is 50 cents/lb less than I pay for ungraded brisket at the discount grocer. Trying a little different technique - smaller fire running wider open with more wood. My Akorn doesn’t move much air, which is awesome for keeping meat moist but I’ve never had great brisket bark. Trying to change that today!

    @bvbull200 made them, wonder what he would charge for a PitFaced BBQ Smoker package? Would include the smoker, some rub, a nice etched meat cleaver, and a tumbler. :rofl:
