    Looks GREAT for being two hours post slice! (the later post that is)

    But this is the issue I've hit before. Cooking post cook while resting...

    From what I've gathered, and will try next time:

    Once cooked to doneness:
    pull and let rest uncovered while monitoring temp probe
    "cool" to 165°-170°
    Wrap tightly in Foil, towel and then into preheated cooler.

    Sounds like this may be a small touch that may yield better results come slicing time.

    But I'll document it either way :D

    I use Jimmy dean hot. No beef but whatever works for you. And some onions because they're my favorite :)

    Frozen. I was going to vacuum seal it but just tossed it in. I've done it before and doesn't hurt the taste or texture.

    First time doing a whole chicken, let alone a spatchcocked one. Smoked in the new smoker for 4 hours at 250°.

    (Side note: Received new internal temp probe for the new Pitt Boss Verticle pellet smoker and it seems to have done the trick.)
