Ugh at work and it rained on my truck after washing yesterday lol

 

What smoker do you have? With my WSM, I do all long smokes overnight now.

 

18” WSM, the next one will be overnight. What time do you start it?

 

I need to smoke some food soon, y'all are killing me super hungry. Leaving work yes!

 

Normally start the coals around 9-9:30, and put the meat on as soon as it’s up to temp. I use a remote thermometer to monitor temps from the comfort of my bed. The temps of the WSM will creep up as the water evaporates, if you use water. Last one I did, temps came up to 275-280 by 7 AM, and those ended up being the best tasting butts I’ve ever done. Real nice bark, as I didn’t get up to wrap them at all.

If you are unsure, try it with a butt or two before doing a brisket.

I just wrapped it in foil, wish I had butcher paper. It’s at 170, probably would’ve been done by 5:00 if I hadn’t wrapped it, but I’m impatient and hungry.

 

At work. Being a referee. 3 bartenders are their own best customers. Hammered by 9AM. Wanting to argue with everyone. Not my monkey. Not my circus. Let their department manager deal with them. Oh wait. She's not here either. Home still. Hung over from last night.

I don’t think you’re supposed to drink on the job, especially a bartender. Lol

 

If they DON'T drink, they're all so irritable no one can get along with them. When they do drink, they're so irritable no one can get along with them.

I see a pattern....

 

Alcoholics are only fun after their second drink, and not fun again after the third. That’s a 45 minute window of them being tolerable for the day. Rinse and repeat.

I hope it is, I feel like I over trimmed it. I’ll find out in a couple hours.

 

I'm not very good at trimming still. Need to learn how to get better at it.

 

I’m too afraid to cut actual meat off. It’s my third brisket, I’m sure I’ll have it down by my 10th. I’ve been watching Franklin’s YouTube channel, mine don’t look as pretty.

Once upon a time, I drank WAY TOO MUCH. way too often. Woke up one day and decided I didnt like drinking any more. Quit for 8 years. Now I can drink when I want and not when I dont want.... A friend who is also a drug and alcohol councelor said I was an alcohol abuser rather than an alcoholic. Funny thing....he was my drinking buddy.

Never was one to drink at work or early in the morning....

on the other hand. Never a wrong time....

 

Apples & Oranges as far as I’m concerned. One impairs, the other doesn’t.
