    Normally start the coals around 9-9:30, and put the meat on as soon as it’s up to temp. I use a remote thermometer to monitor temps from the comfort of my bed. The temps of the WSM will creep up as the water evaporates, if you use water. Last one I did, temps came up to 275-280 by 7 AM, and those ended up being the best tasting butts I’ve ever done. Real nice bark, as I didn’t get up to wrap them at all.

    If you are unsure, try it with a butt or two before doing a brisket.

    I just wrapped it in foil, wish I had butcher paper. It’s at 170, probably would’ve been done by 5:00 if I hadn’t wrapped it, but I’m impatient and hungry.

    I’m too afraid to cut actual meat off. It’s my third brisket, I’m sure I’ll have it down by my 10th. I’ve been watching Franklin’s YouTube channel, mine don’t look as pretty.

    Once upon a time, I drank WAY TOO MUCH. way too often. Woke up one day and decided I didnt like drinking any more. Quit for 8 years. Now I can drink when I want and not when I dont want.... A friend who is also a drug and alcohol councelor said I was an alcohol abuser rather than an alcoholic. Funny thing....he was my drinking buddy.

    Never was one to drink at work or early in the morning....

    :rasta: on the other hand. Never a wrong time....:yes:
