    Picked up some beef yesterday, a friend with a membership to Restaurant Depot was headed down and I joined in with tri-tip and top sirloin on my mind.

    Picked up a bag of select Tri-Tip for $2.94# and Choice Angus Top Sirloin for $4.16#. Not sure what Superior Angus Beef means?

    Here is the first tri-tip untrimmed and then all trimmed up, overall I removed 4.25# from the original 19.48# so trimmed like I would usually buy it this came out to $3.76#, good deal. I've made Prime, Choice and Select tri-tips in the past and find Select is just fine for this muscle.

    The top sirloin, I pealed off the culotte muscle and trimmed it up similar to the tri-tip and will smoke it the same way I do tri-tips. First shot is the culotte muscle prior to removal. It is actually an extension of a muscle from the round that overlaps across the exterior of the top sirloin which is an extension of the strip loin muscle.

    And the trimmed up culotte. I remember someone posting a Brazilian? method of cooking the culotte that sounded interesting but I decided not to try that this time, too late after trimming it up, I remember that method left a heavy fat cap on top.

    And finally the rest of the top sirloin, one large roast upper left and some steaks. I left the culotte in the fridge for a nice meal for me and the wife Labor day. One tri-tip is in the fridge for sometime next week and the rest goes to the freezer. Gonna be eating good over the next month. I think I will smoke the roast and then slice it up thin either for basic french dip or maybe Chicago style Italian Beef Sandwich, leaning toward Italian, need to research.

    as far as the knives or specifically from that site? I got these as a gift so only researched a little after receipt.

    Would those knives make me a better cook, coz I'm using old Chicago Cutlery? LoL I think I should save my money for more meat! Thanks for the replies fellas.

    As long as you sharpen your knives... that's all that really matters. I still rock my Chicago cutlery set from a long time ago :thumbsup:

    that site looks sketchy. Other sites (reputable ones) show the set with a COA (certificate of authenticity) which mine came with. It is absent in that site.

    from the quick searching I did post acquisition, my hopes are high and so far have been pleased. That could be cause they were free... but either way :D

    My knives are sharp as long as I can keep my wife away from them. ;) I used to spend a lot of time sharpening. Now I have a Work Sharp. Best 70 bucks I ever spent. Maybe takes 30 seconds to set the edge back to SHARP.

    Was supposed to work 12+ hours all three days and at last second today they canceled job... now I don't know what to do! No wife in town... lots of meat in fridge... lots of Jack Daniels...
