    Ima firin' up the kettle tonite. Filets, potato bombs and afew jalapeno poppers. I've noticed that some of you put the wood smoke on the charcoal, some on the grill grate. Tell me why, please.

    If you put it on the grate, you get more smoke since the wood isn’t it direct contact with the burning charcoal, so wood lasts longer ??

    Growing up (I use that term loosely :D) I had to milk the cows with mastitis and treated with penicillin by hand. Then slop the milk to the hogs. Don't want milk with penicillin going into the bulk tank with the number of people allergic to it. Then start feeding them a healthy diet of corn before time to butcher them. Best pork ever had. Lets see if I left now... still wouldn't make it LOL. Looks like you did a great job!

    Damn you and everyone else in Texas are almost enough to make me move there. Well I could still retire there... In the winter months anyhow.

    Drove into town and that is what the Lowes here had, but already have one. Was tempted to get another though haven't picked up my second limited edition kettle yet. Great score Rick!

    Went to Aldi for the first time and struck out there, really small store.

    Costco didn't have any cap steaks! So started off with 7 lbs. of bacon. And a few other things. Never have bone in ribeye or ribeye roasts at this one. Until today. And Prime.

    Hell that is what I pay for a Choice grade Tomahawk at the other stores around here.

    It depends for me...

    If going low and slow on the kettle which is usually my goal when using it for smoking and using the snake or minion method directly on the coals. Because "in theory" it shouldn't ever really get that hot. But if adding smoke to a steak or wings then on the grates because it is usually hot and will last longer as Paul said. And because of that I will often add wood chunks on top of the grates if I think there is any chance of the fire getting too hot.

    I do not soak my wood chunks but do keep a spray bottle filled with water to calm the coals down if they get hotter than I want. I spray from the food side toward the coals to prevent any ash from blowing on the food. Except in winter then it usually isn't a problem. But the damn nozzle on the spray bottle freezes up in seconds of walking outside with it when it is below zero anyhow.
