    Cream, cheddar cheese and diced garlic for the inner. One pound of Jimmy Dean, ground Italian and a half pound of Chorizo for the sausage. Halfed Jalapenos. Wrapped in bacon and topped with Pitfaced rub.

    I sear my steak on a grill grate that is sitting over the coals when they are still shooting flames. Once they are seared I put a chunk of hickory on the coals, shut the vents down almost all the way and set the steak off to the side. The vent on the lid is opposite the pile of coals with the wood. The wood will smolder and put out a ton of smoke and you will taste it on the steak. In fact, I'm in the process of doing that very thing for dinner tonight!

    Lifted the bones out and scooped porky silk outta the skin-bowl lol
    That big sucker took 12 hours, prolly dressed out at 135# or so. She went from on the hoof to in the bellies in about 20 hrs :)

    That looks great! I'm trying Mini smoked fatties tonight and they look a lot like your eggs :oops: Going to take me awhile to get this down I think... But so far the smell is killing me. And Nova.

    Just started raining again so glad I tried the Genesis and it is working well so far.

    For the Oink Oink Oink in the garden sauted onions and green peppers in bacon grease. Before the onions carmalized took it off let it cool down and mixed with ham and cubed extra sharp cheddar.

    Used Medium spiced sausage from a local store that I like to wrap it in. Then wrapped bacon over the top. Easier said than done, but think it will turn out OK.

    Also wrapped 2 ears of corn and an Anaheim pepper stuffed with cream cheese and crab meat. With a coating of Memphis dust. Sweet, no salt.

    Been an hour and holding temps at 210-215 going to turn it up soon. Only running the left most burner. Got plenty of smoke if anything afraid it may be too much but after 45 minutes it finally settled down. But still smells pretty damn good.

    2100 and I'm hungry as hell. That smell, not to be confused with other smells...

    An unusually high amount of pinstriping.
    Turned out fairly well. 14 hours on the smoker with wrapping it in paper. Let it rest a little over an hour in a cooler and this is what I ended up with.
