In addition to brisket also did a bunch of wings and finished them in an air fryer. IMG_20180811_152913.jpg IMG_20180811_181028_604.jpg

    Nice wings.
My concern is how clean your smoker is. What’s the secret for keeping it looking new from the box?

My old one died and masterbuilt wanted $175 for a replacement box. Picked up a whole smoker at basspro for 175. That's why it is so clean

Interesting. I almost always use cherry when I do turkeys. I like the mild flavor and the color. But, it may not be for everyone.

Try maple out. I think it's good on poultry, too.

Otherwise pecan is nice and mild so as not to overpower the chicken.

Best advice is to just keep experimenting, though!

I'd get a double, then when you cut them, you can cheat way over on one for the wife, leaving a comically large single tomahawk for yourself .

Cherry’s my go to cuz there’s always some in my firewood pile, never noticed a strong flavor :notsure:
Might try upping the temp to 350 or so so less time in smoke? That’s the temp I usually do my yardbird......

The cabinet type cookers are actually easy builds. Insulation is the key to them

Do you do such fabrication? I'd love to work with someone knowledgeable of the craft and get my own hands dirty. I'm willing, but I'm tools/skills limited .

Yes been building them since I was 11 year old. Very long time ago. I always have one I’m working on, keeps me busy and I enjoy building them.

Once I see how much it is to ship, I can hook others up if cost effective if wanted. Untrimmed though :D

I can get them at Rest depot, just not prime. I’ll keep hoping the comment cards i put in the box every trip pay off at some point.

No. I made my own marinade and it had no sugar or fruit of any kind (other than citrus I hate fruit on meat).

The cherry wood I have when you split it, smells like cherries.
