    I could do that. You're about an hour from me. I'd be able to put in a full day on the weekends for a while to get them built.

    We need to explore this a little further and figure out what sort of time and money investment is required to start making it happen.

    Once they are received from water jetter it’s just a puzzle and will tack together very quickly then just get in the welding chair with your mug of cold beer and get it. If we preserve the metal correctly no sandblasting will be needed

    maybe its that particular tree. If you get the chips from the store its not as strong. Like others said maybe less smoke time and try apple wood.

    This! Mig is damned easy. Just practice on some scrap, get the setup right. And stay away from flux core wire, use gas. I have a setup for mild steel, stainless steel, and aluminum. As long as the welding is horizontal it is easy. Vertical or overhead, not so much.

    @Bigdaddy4760, @Misplaced Nebraskan, and I will be in discussion, I think, for the next month or so to see about what it would take to pull this all together.

    I think I can dedicate the funds towards it. If my once-a-week spare time is enough to help it progress at a reasonable pace, then I should be ready to green-light the project for the end of this year or beginning of next.

    It would hold enough meat so that, provided I get an appropriate trailer to serve out of, I could start looking really hard at picking up legit food-service gigs. That's a long-term goal of mine anyways.

    If the build is planned right (wheels/casters) and my backyard is updated accordingly (covered spot for storage, concrete path for transport), then this thing could easily transition from personal use to event use.

    I'm getting giddy just thinking about it.

    In thinking about transport you should probably add in additional hooks for tie downs and a hook so that you can use a winch to pull it up on the trailer and control it coming off the trailer.

    Really good idea. I would want the ability to carefully load and unload this thing by myself if necessary.

    @bvbull200 , what is the deal with nomenclature of single pan and double pan? Talking about rack size for catering style pans? can fit 2 vice 1? best I can guess...
