I agree with Jason, 321 method is damn near impossible to fuck up...throw a couple of hard ciders and PBR in the 2 hour bath is what I usually do.

What kind of smoker are you using? Go with baby backs over St Louis style if you can find them.

Any other tips or do you not mess with traegers?

I feel like a traeger is cheating, but since it's mostly set and forget, I can do other stuff while my meats being pampered.

 

other stuff like "drink beer!" and wait...pace yourself. Its a marathon.

 

Nice I've never used a pellet pooper but I've eaten some great food my buddy has cooked on one!

Chicken thighs are fatty enough they don't dry out.

My only other advice is invest in a good meat temp probe!

I use z treager. Love it. Super easy to keep temps in any weather.

You can upgrade the thermostat controller.

Funny I've had my boots on for a few yrs now no issues. I beat the piss out of my rear Billy's last weekend. Surprisingly they survied. Oh and no bumps or straps in rear.
Bottomed out hard at least 6 times. My Shocks get so hot water has no chance. I dont see why everyone worries about the boots. Second gen you cant flip the rear.i dont think it matters much either way.
