    5 hour smoke should be about 2.5hr or so in foil to get above 195. Usually I’m good on time for parties. Hit snooze to many time on my alarm clock lmao

    Well.....I went and screwed up....bigtime, too.


    Went out to fire up my 22" kettle to cook a chicken....removed the lid and was greeted with nasty mold all inside my grill, dome, grates and Slow'n'Sear.

    Evidently there was water left in the water chamber when I put it up. Three weeks in a hot garage.

    What an idiot. :frusty:

    Needed to use this thing for some ribs tomorrow, too.

    Running a full load of coals with the vents wide open in it now....may run another load again and then see how it looks after that.

    Using the 18" for this afternoon's chicken.

    I haven't bought lighter fluid in ten years or more. It sure would come in handy right now. I think I'll grab some next time at the store just for such occasions.

    I've got the nasty 22" running with a fully lit large chimney load poured over other coals, vents wide open. It was showing 500+ degrees. I left the Slow'n'Sear in there, too. Rotating the lid every so often.


    Kill it with fire, indeed !!!!!!







    Thankfully the little 18" Jumbo Joe was ready to rock 'n roll.

    Hell, I may even do tomorrow's ribs on it. I'm not even joking. Snake method and let it ride......

    Spun it over the coals for a bit.....then back around....flipped 'em....and spun it back over the coals......now have them good and dizzy and spun back offset with the vents closed up to 1/3 and the lid on. Time to sip a beer and let it do it's thing.




    At least their is spinach & artichoke dip and deviled eggs ready if anyone wants a football snack.

    These two are so dang easy that it ought to be a crime.

    1:2 ratio on Dijon mustard vs Duke's mayo.....everthing else to taste.


    Dip is stupid easy and perfect for gameday.

    10oz package of frozen spinach (thawed & drained)

    14oz can of artichoke hearts (drained & chopped up)

    3 cloves of fresh garlic (smashed & diced)

    16oz container of sour cream

    8oz package of cream cheese

    2 cups shredded parmesan cheese


    Mix it all together in a pan under medium heat until it gets slightly bubbly and then serve it up.
