    Go for it! You can use the same cure for pastrami or corned beef and even cure chicken with it. Time is shorter for smaller things..but plan on a full 14 days for the pork shoulder.

    Pops should have sold that recipes for a few bucks, he’d be rich. I see so many people using it on SMF. I’ve been tempted to try my hand at some bacon. I may pick up a small belly this weekend to give it a go.

    Some NY Strips tonight. Not my favorite cut of beef, but they did the trick. Note the one with the GrillGrate grate marks. I spent the money on those SOBs, so I had to make one of them pretty. :laugh:

    The others were seared on expanded metal. Not quite a full char, but a little crunch at least!

    I forgot to eat supper today. Then realized it was too late to eat supper. Staying in a hotel sucks, especially when you’re fixing problems that you have been paying other people to fix whilst missing meals.

    Still and all, Sierra Nevada and Glenmorangie are something of a meal.

    Off orders and back to Kirkland Signature tomorrow, though. Could be worse. Gonna make ribs this weekend. Good ole boring Pitfaced ribs.

    It’s going to feel good to be home.

    Well considering when having sex on the beach you get sand up in places you shouldn’t get sand... yeah that’s a fair comparison to Coors Light.

    I just recently set my gasser on fire grilling up lamb chops. Apparently there was more grease in the two grease trays than I realized.

    Chops were a perfect medium rare.

    Kilo Charlie is my username over there.... and yes... he could have made a killing.. but he's super nice and super helpful and his recipe is amazing.

    I've made all kinds of bacon, Canadian bacon, corned beef, pastrami and of course the pulled ham with it. Most people aren't willing to spend the time (or refrigerator space) for science projects.. but it's my favorite past time.

    A great burger can be made in a pan. Make them into balls and get the skillet red hot. Drop them onto the pan and let them sear for a minute or so, flip them and smash them flat. Sear for another minute or so and flip.

    The only seasoning you need is salt and pepper.

    The goal is a burger about 1/4" thick and the size of the bun. You stack them 2 high with cheese between them.

    I was at a cigar lounge enjoying a nice smoke when one of the other guys offered me some special edition Jameson's. I'm a noob but a splash of that on a couple rocks and I was impressed by how smooth and good it actually was.

    The old cafe at the livestock sale barn made them that way. One of the best burgers ever. All gone now though. :(

    Smash Burger does them that way. Probably a commercialized version of the place you’re talking about.

    The sale barn was right down the street and over there alley from our house. Had amazing food! Probably cause it was fresh! Not sure if they still serve there but gonna have to look into it for my next trip home.

    Anybody else smoking a brisket overnight?

    Big boxing matches are a big deal for me and my friends. I am about to put a 15.2# pre-trim Costco packer in the WSM 18. It should be perfect timing to cut it after a few hours rest in the cooler.

    Karin's kustard in Smyrna tn does them like this. They get crispy edges on them and are a million times better than smash Burger, which actually closed recently. When I lived in Smyrna, Karin's was the only place I'd go for a burger.
