    Be warned, there is no inside seating. It's either take and go or go sit in picnic shelter things beside the train tracks. The trains are frequent enough to be annoying with the Nissan plant being down the road.

    Part of the reason I let it ride through the stall instead of wrapping.

    I like doing quality assurance on the meat by eating the small burnt ends as I am cutting it up.

    Correct, no foil. I put boiling water in the cooler for about 20 minutes before I put the meat in there to heat up all the rotomold stuff, so It does not rob heat too fast from the meat. It will just steam itself in there for hours.

    Supper tonight is ribeye steaks, Shrimp brochettes, roasted asparagus, pablano pepper cheese grits and breaded stuffed jalapeños with brisket, pepper jack cheese and deep fried.

    First time I have cooked on a Weber in 25 years. Steaks are great but I didn’t get the sear marks I like. Got the Weber for my wife to use as she is short and has trouble lifting the lids on my cookers.

    Try grill grates if you have them. I started using my Webers again and use them now almost exclusively. Since I got my 26" Weber the only thing I put on my smoker is a brisket.

    Just off the smoker before I wrapped it in foil to rest for 20 or so min.

    6Lb pork loin, lightly covered in olive oil, lemon pepper and salt. Smoked at 250 for about 2 hours.

    I sprinkle garlic powder on a totino’s all the time. Put it on the Traeger and the kids love it.
