Just did a cap steak for dinner. Damn good. I used Weber Chicago steak seasoning. Sear it using grill grate then move it off to the side, away from the coals. Run the grill at around 375/400 and keep a close eye on the internal temp (I have remote thermometers). When it hit 120 I brushed on melted butter that has garlic, rosemary and thyme mixed in. Pulled when the IT hits 130.

Got a real close friend who used to be a sniper and when his wife strayed him and I were talking one night and he told me better judgement won and both her and him walked away without ever knowing how close (or in his line of work far away) they were to just being dropped.
