    Turned out great. Blew through the usual stall at 165f and I pulled it at 195f. Only took seven hours :bananadance:

    Also found a chip in the enamel on the lip of my kettle. I have been babying this thing so I’m wondering if it’s a defect. Probably not a big deal as long as it doesn’t rust.

    7 hours?! Never had one that short jealous! Looks good too.

    I'd take a picture of it and send it to Weber their warranty is outstanding. Does look like primer under it so should be OK though. Yeah not sure I'd sweat it either just throwing out an option.

    First cut up some bacon. Because all great recipes say first you cook bacon. When almost done throw in some shrimp. AKA Surf.

    Cut up shrimp, some of the bacon and added pineapple cream cheese.

    Twice baked potatoes in a small casserole with the rest of the bacon topped with smoked cheddar. And the turf, prime Sirloin wrapped in bacon.

    Only meal today but still shouldn't have ate all the carbs in those taters. But damn it was good along with everything else. I go to sleep now LOL.

    It is probably the easiest thing I have ever used.
    I ordered a digital controller where this unit only has the 3 settings.. All in for around 250 bucks, I can't complain a bit. Just set it and forget it.

    I want to smoke a brisket but those are expensive around here and I wasn't super happy about the one that came off my UDS.

    Excellent deal on Tri Tip, I really enjoy buying them untrimmed and trim them up myself. I smoked 1 yesterday and it was only select grade which I assume those are because it doesn't say Choice and it still turns out great, no need to pay extra on this cut of meat, it's lean whatever grade.

    We had a very busy summer. Lots of work but I made time for a few things like BBQ and hiking with my daughter, but didn’t make enough time to fish. Oh well. Priorities.

    We just got off a stretch of fantastic weather. Naturally I had to work.

    It gets a lot colder up where at the mine than I have to deal with. Did Nome and Fairbanks in January for a few weeks at a time...decided that crap just isn't for me.

    Ya and the Save U More meat isn't really very good most of the time. Costco is best if you happen to be in Anchorage; the one on Dimond had brisket for $3.69 / pound last Friday. And that's Prime too. Walmart up in Kenai isn't bad as far as price and the meat is way better than in town, but not nearly as good as Costco. Always with the tradeoffs...
