    Alright... I feel like this question may be debatable, but I just put a plump brisket on my pellet smoker 225 deg F. What internal temp do you guys like to bring your brisket up to and why? Ive seen anywhere from 160F to 200F.

    I usually bring mine up to 200 to 205 and then pull it. I can't imagine pulling at 160 for anything other than wrapping which a lot of the time I don't even do anymore.

    @Kanyon71 is spot on. When I'm asked for a temp recommendation, I usually suggest 200* just to be certain slices will hold.

    When you hit your target temp, start poking with a probe or skewer and get used to that feeling. Then evaluate the results. Eventually, you'll be pulling briskets on feel instead of temps!

    I wrap at 160 in peach butcher paper. I will pull anywhere from 200-205 depending on how a toothpick slides through the brisket. I then wrap in a towel and put it in a cooler for an hour minimum.

    The taller 2 are 1.75L special editions that Costco has had in the past... they're #1 and #2. the shorter one is a pint glass and rubber bar mat coaster I got from the JD website.

    The Sinatra select is really good. Wife got mine at duty free awhile back when traveling. That and a 3 liter bottle of Black label. I refill the 3 liter bottle regularly :D

    JD is one I’ve never been able to drink. Reminds me of taking a hit of gasoline lol. My b-I-l loves the stuff. He can polish off one of the bigger bottles in a good weekend. :)

    You've noticed both are missing from my collection. I wouldn't open the 3L unless I had two! Haha I saw a Sinatra bottle a few weeks ago for $200... Just couldn't convince myself to do it at the time.. now I wish I had!

    I've seen pictures of the older ones with the wooden cradle. And the newer ones with the metal wire cradle... Never in person tho.

    You could just drop those off at my house when you head back to Nebraska! Haha

    It's got some Mods
    After work today I picked up my first ever brisket - A 15lb angus choice for $2.88/lb. I have no idea if that's a good price or not but it's what cash and carry had. I just trimmed it down, covered it in Pitfaced rub, and now it's wrapped up in plastic and back in the fridge. I was thinking of throwing it on the WSM at around midnight tonight. Good idea or should I wait until the morning? I would really like to be able to dig in around 5-5:30 tomorrow evening.
