    Pig is generally fairly cheap around here. Beef is not stupid, but I rarely even look. You can find packer butts for less than $2.00lb any day, anywhere. A buck fifty nine is the average.

    @12thmanhawkfan I have had a problem with placing my thermometer in the tip.... there was a huge section of fat that gave poor readings. I've since started placing it in the thickest part of the flat.

    Also, try using just Montreal Steak Seasoning.... get a big bottle and use liberally all over for a rub. Then modify from there in future briskets.
