Did this a couple days ago. Got me a little switchback action done. Couldn't wait for meso's V5, and couldn't pass up the opportunity to have someone local make these for me. Thanks @gaterose for the custom build and help with install.

@Bigdaddy4760 here's how I do my steaks with the seasoning I made for you.

Apply seasoning. Enough to turn the steak red. I let it sit for about 40 minutes. If you use charcoal, I do this then get the grill going.



I season both sides and I don't worry about the edges.

For 1/2" steaks, 350*F is about perfect. 3 minutes per side. 3/4" I do about 4 mins per side.

More soon

 

3 minutes a side and between 140 and 150 when they're done for rare/medium rare.
