Two things I learned from this weekend’s smoke.

    1. In the ongoing debate, its now fat cap down. Case closed. ;) I tried it down for first time and found no stickage to the grill. I was always getting stickage with cap up

    2. Finishing chicken in the oven at high heat to turn the rubber smoked skin into something good works great

Last observation. Quickest brisket that I’ve ever done. Only 8 hours to 203. Although it also was the smallest 12 pounds of costco prime goodness.

    Pumpkin Seeds on the Smoker.

Coated in a little vegetable oil, put on the smoker @165 for about 20 min, salt them and then cranked to 365 for 20 min to roast them (turning at 10 min).

If I ever finger out how to mount the thing on my rotisserie... What if the new debate is fat cap inside or outside? What a frickin quandry we would be in then!!
