    Did some reading from Chef Google. One suggestion was to not brine because the turkey already has a 'solution' in it. Mine has up to a 20% solution.
    I'm gonna KISS. Rub with butter, season with either Tony Chacherre Creole or Slap ya mama Cajun. Maybe both. They are pretty much the same thing, imo.
    On the GMG til 165f. Hope it works.

    No smoking but at little grilling on a cool evening. The chops look so nice from Costco but are pretty darn lean. So, worked them over good with the Jaccard and let'em marinade overnight - really made a diffrence in the texture. And a little brown sugar and pineapple for fun.

    Awesome! :thumbsup: Agree they are great looking but very lean. I have a jaccard and never even thought to use it on pork chops great call!

    Been awhile since I had steak, I grilled one tonight. Costco ribeye but just choice grade. With Montreal Steak seasoning.

    Tired of romaine salad and wanted something green but warm. Cut up a pound of bacon and cooked it. No I didn't drain it don't be silly. Added a pound of raw spinach. Cooked that down and threw in 2 lbs. of shrimp.

    Yesterday at the grocery store they had buy a Cure 81 ham and get a free young hen turkey. So of course I got both. Might cut the legs off the turkey and roti the breast\smoke the legs. Or do the ham. Or say the hell with it and wait until it warms up this weekend. And rains :rolleyes:

    Same here. I make a really good smoked turkey, and might still do a seconds one that way this year, but I love fried turkeys.

    I'm hosting the fry again this year. However, instead of people bringing me their birds, this year it's $30 and you can come over as early as 9 a.m. to hang out while the turkeys cook and enjoy the Bloody Mary bar. I think I'm up to 10 turkeys so far. It's a lot of fun and a great way to kick off Thanksgiving. We have a number of family a friends show up.

    That badass Pitfaced BBQ Drink Tank from @Kanyon71 and my secret admirer will hold the Bloody Mary mix, I think. :D
