These are great, one of the best things I did to my truck.

 

Since it's raining it's ass off here, and since we didn't get to cook turkey on Thanksgiving, I'm doing it today. Picked up a 25.5 lb bird yesterday at a great price.
Last fresh turkey they had.




Sucker is freakin' huge! I normally go for one that's like 12-15 lbs.

I'm also prepping the Trinity for the stuffing (also a little holiday lubrication for me ):



Pork sausage from a local place that's been in business for nearly 100 years, the bag-o-innards, and some extra gizzards and hearts, onion, celery and craisens (dried cranberry raisins, added later not in the pic, pecans will be added too at the end)

Rob Lube:

Local excellent egg nog, Angles Envy Bourbon floater, then stirred with fresh nutmeg



How the mix looks now after simmering with the first and last part that went over the fence:



Of course since this is Maryland, after two Bourbon lubes, I am switching it up to a local Whiskey, named after the famous farm that has bred true legends.



Ok back to writing my Auxbeam Light Bar(s) review. Only 2-3 more hours for the turkey (need to flip it over to brown the breast too).
I want to be done and toasty by then.

We'll likely just eat it tomorrow with all the other fixins. I need to bake the stuffing and that will take forever. I could likely do it in the oven at the same time but we are in no rush.

I had him add three more inches to the back so I could cover the slope on the back of the hood and roll it over the edge and under.

Just a little something I whipped up.

I have no idea how I am gonna flip this turkey over though. 25 lbs is not that much but I want to be gentle so it doesn't fall apart. I tried this because I hate when the thigh skin is not crispy and brown like the breast. I think I am gonna roll it out of the pan/rack onto a cookie sheet then use something like a heavy wooden spoon and stick it in the cavity to lift it.

I'm modding how I cook turkeys now. I tell ya, it's a sickness, this site!!!!!!!!
