    Bird came in at 165 IT dead on at 2 hours total time. Alton Brown nails it again.

    Let it rest for an hour while putting together the baked mac and cheese. Tried a little part of the lower breast and it is nice and juicy, perfectly cooked. I do wish I'd gotten the breast skin darker, but still not a bad result for a first outing.

    Mac and cheese was pretty good, but next time I think I will delete the onions. I was pretty ambivalent about them from the start, but like to try a recipe as is the first go. Next time I will delete the onions and sub quarter of the cheddar for gouda.

    Stuffing is in the oven at present, probably another 20 minutes all told, but I'm pulling the foil in 5 minutes and checking the IT and moisture.

    I don't drink much, and deplore tequila. Shit is foul.

    Cooked to 165 before pulling the bird, let it rest and it got to 168.

    No. For what I paid, it damn well better be calibrated.

    Nice thing about mass produced ICs and semiconductors, they are built with tight enough tolerance you don't have to DNO cal every single device

    That's like saying I should drink better piss water. It's all piss water.

    I've had high end tequila. Wasn't impressed. It still tastes like vomit.

    No on the piss water.

    Now as for Tequila high in stuff is freakin awesome. It's my preferred liquor lol.

    I was going to say the same. I just re-tested mine the last time I smoked something, as the probe seemed to be off. Both probes were spot on.

    This. Once I learned how to consume it correctly, it became a whole new world. Tequila is like bourbon, so many nuances on the palate. I really enjoy it.

    I had a procedure done a few months back. As the anesthesiologist pumped whatever into my IV, I ask if I was crazy or could I actually feel that stuff coursing through my arm. He said it’s totally possible, to which I replied “feels just like a shot of tequila” which all the staff chuckled, then I exclaimed “feels like two shots” and don’t really remember anything else...

    Those probes appear to be earning their keep quite well.

    Food looks great. If it ever stops raining here, I am going to seal up my smoker and see about doing work with it along these lines.
