    Made belly pork burnt ends again Thursday for Friday cookout . Screwed up braising part .Temp climbed to high and when checked after an hour was looking done .Warmed up next day and half was to hard . Over cooked . Win some :D loose some :facepalm:lol.
    Ended up going to a place to pick up a tub of mac salad lol...

    According to the grill readout temp? Do you have a remote thermometer that you can use? Just thought of this.... is the grease tray or trays installed correctly?

    Ya from the grill thermo. I have the thermopro one below In the links but I don’t have one set in the grill. I need to figure out how to “clip” it somewhere to read the temp. @Kanyon71 has been helping me out via PM though. I just changed a setting and hoping that will solve the problems

    If you don't have a clip use a ball of foil and stab the probe thru to hold it above the grate.

    The ThermoPro should have come with a v shaped clip. You slide one of the probes through that pinch it and it hooks between two of the bars on the metal grate. Then you just set that probe to grill temp (can’t remember name) and it will give you the readings.

    I got to stick the probe through the holes, but then didn’t even think to “clip” it as they say on the grill. Would make more sense to lay it out flat and say pinch in between grate rails. It’s in there now! It’s in a different spot than the Traeger thermo put it looks like it’s reading about 15 degrees less

    1 other thing, new grill needs 'cooking in'. Get it as hot as it will go, to burn off manufacturing oils. Could be just the oils burning and throwing temps off? I dunno. At any rate needs to be burnt in before you cook with it. Have you ordered in for tonite yet? :) You will get it, just be patient. So I have been told, don't work for me!

    Or cut a potatoe in half, and jam the probe through it, then place in smoker. I saw you found the clip, but it kind of sucks really.

    That no look good, grease fire. Are you sure the grease tray is in correctly?

    The grease tray sadly doesn’t cover the entire part. A good fat piece fell in the crack and poof fire. Going to try and start again. Clearing it all out now.
