    I’m still laid up from a cold, so won’t be doing anything. I planned on a brisket, but we will only be going to this party for a few hours now.

    My wsm is pretty much set and forget. I just don’t feel up to doing anything right now. I haven’t left the house since Wednesday.

    Nothing against the Yoder at all... But at the price point I was looking at the comp cart and then the P&S, the P&S had stainless steel in it's build and a few other things I liked. But really... Could've flipped a coin.

    In and out of here with work being insane. Had to sneak a smoke in though :D

    I only did a suckling pig, but read a ton and watched Malcom Reed a few times...



    More than happy to try and give tips if needed though :fistbump:

    Well pulled the brisket off the smoker at about 180, stuck in the oven until 202. Wrapped in towels. Will stay up another hour for resting and then probably try a slice and then go to sleep

    Despite all the setbacks today, it came out decent! Pork butt goin on for NYE when I wake up. Hopefully it’ll go smoother

    Thx that would make absolite sense in a smoker: pizza tray with holes in it!
    I have one already, but sans holes
    So will procure one of the ones woith holes in it.
    Darn! I should’ve get this info BEFORE Santa arrived! Now I’m going to have to spend the $ feom my own pocket...oh well! Can’t wait for another yr:D

    For the ones doing pizzas on a smoker, what kind of wood do you use? As usual people like different flavors as personal preference.

    Depends on the toppings. Meaty, I'd go mesquite or hickory. Veggie, birch or alder maybe. Combo, :goingcrazy:

    Sounds good, I mainly cook with hickory as it is easily available here and we like the smoke flavor as well. Thanks for the advice
