    Yeah and my first purchase for the WSM was the Cajun Bandit SS door a long time ago. It was bent and wouldn't seal tight, no matter what I did to it would always spring back. Need to take it to a machine shop someday. The stock WSM fits mine perfectly though and I don't loose much through it. Well it is thin so sure heat but when it is cold I put the silicone jacket on it.

    Need to fire it up next week or maybe even this weekend. Going to be in the 30's soon so will be shooting. Someplace, one or both days this weekend. Which means a short smoke if I do one.

    The grill grates are the most used mod that I use out of all of my outdoor cooking gear. Used them tonight.

    4 bacon cheddar brat patties for me and 4 burgers for the youngest. And carmalized some onions.

    Slaw as a condiment so no Mayo. Ketchup, mustard, onions, pickles, tomato, lettuce on a grilled roll. Because I promised myself I would eat a salad today LOL.

    I made up a pot of beans with the thanksgiving ham bone yesterday. Now they are good and cold so I need to break them down into freezer bags and get them in the freezer. Had some for breakfast with a couple eggs.....he he he.....

    It's all in the freezer now. Thinking about a batch of spaghetti then throw some of that in the freezer also. I guess the time off has been good to stock the freezer with quick meals.

    I do have steaks defrosted to grill for dinner tomorrow.

    Heee Haaaa. Today starts 4 months of major remodeling here at work. I have a suspicion my free time just disappeared. Chef isn't done moving his crap out. Food & Beverage (front of house) thinks they're ready. Haven't moved ANYTHING. No one here except construction people. My instructions to them? Put it all in the dumpster.

    Snowflakes fallin again. Weather man says maybe 1 inch. Just enough to cover all slippery spots. Which means every where. They only salt curves, hills and stop signs on township roads. But, temps are to rise later this week to melt everything.

    Somehow....Our chef thinks that a degree in Culinary Arts trumps mechanical engineering degrees, and more importantly, trumps a badge that the state fire marshal carries when it comes to building a LEGAL building.
