I have a lot of mud/dirt/grime under the hood from offroading/water fording. Looking for some product links to Amazon for brushes/cleaning products that are safe to clean the engine bay out with. Thanks.

I use Gunk or Simple Green diluted 1:2 with warm water and a long brush.

You don’t really need to be careful with the engine bay area on brushes but don’t use harsh chemicals all the time, use just water when you can, and get a good dressing to put on the plastics to make cleaning easier but to protect the plastics from dehydration if you wash them often.
