    Oh, so it's like when anyone over 40 eats Taco Bell?

    I used to live on that crap. Ate it most meals some days. Now it's just if I know I'm going to be near a toilet and don't have anything important to do all day. It's basically like a "cleanse" some people do.

    Though I am eating MUCH less of it than I used to. Partly because I feel better when I eat real/fresh food, partly because I got sick of the roulette game- did they or didn't they get my order right. Also, I'm a bit wiser now, in terms of health.

    Of the "main" meats in BBQ, chicken would be the one I could most live without. The allergy sucks, for sure, but at least it isn't beef ;).

    Yeah I don't know what the deal is there. But I and my son have both been having a fang on for hot wings, he's been warned about the spice, and I need something quick and easy to cook on the Akorn Jr, so it all works.

    I will have to find out how many guys are working on Saturday at the Oreilly's (the LAPS where this guy and my son work). Might just back the Tacoma up near the front door and light up the Akorn Jr on the tailgate and make them right there for the guys. ;)

    I will need to buy a couple stainless bowls, though. Seems all of ours are either glass or plastic.

    Since I assume chicken wings and drummies are WAY too small to properly use a food thermometer on, are there any tips or tricks to cooking them done without overdone?

    EDIT: watched this https://www.youtube.com/watch?v=LTyDtuKvEE8, noticed he used a thermopen sort of thermometer with a fine probe. So I bought a Thermopro version on Amazon for $8. Problem solved, problem staying solved. I'll follow his method, from frozen, and probably do the cook on Sunday after the new toy arrives, just to make sure I don't get anyone sick.

    I had one of those cheapo thermometers. Off at 32f, off at 212f. And reads slowly. https://www.thermoworks.com/Thermapens Get one of the many styles they have, and you will be glad you did.

    Especially given that I bought a Weller unit at Lowe's for $10 last year (bigger probe and much shorter assembly) that has been working very well and giving good measurements.

    I am sure the Thermapens work very well. For $100 dollars, they damn well better. When it comes down to it, I don't care if the probe folds away. All I need is to know how hot the food is internally, with a small cross section to the probe.

    So we just got an electric smoker. And I just found this thread looking forward to seeing what ideas come up (and going through the some of the last 1500 pages.)

    Iv only done a few things so far. bacon wrapped sea scallops, I made a marinade with something similar to a Cajun rub with garlic/onion olive oil I made. Also did some shrimp on skewers the same way and with just the oil and black pepper.

    Wings turned out great. Trying to decide what to do next probably ribs or a brisket.

    They have less expensive units, look over the site. On sale now too. I bought the MK4 for $80, but it has bells and whistles I really don't need. It reads in 2 seconds, and reads with only 1/8 inch of the probe. In other words, you can check drummie temps.

    Thanks for it. I will keep your input under advisement. If I find the Thermopro doesn't cut it when I do my drummies, I guess I'll have to spend a bit more. ;)
