    Last time we did them I also smoked up some Brat's and Kielbasa, went really well together. I usually do a pan of smoked baked beans and some Mac n Cheese to go with.

    My beans I usually start out with the Bushes baked beans, I add cooked sausage (spicy breakfast), I add honey, ketchup, mustard, brown sugar, bacon, onions, (I don't do red/green peppers they mess with me), and I add pit faced to mine and then put them in a pan and on the smoker to cook. I don't go by anything other than look with them. Mac n Cheese is my wifes so I'll have to ask her for a recipe when she gets home tonight but there are at least 2-3 really good smoked mac n cheese recipes in this thread, I think @Misplaced Nebraskan, @Cold Iron and @scottalot all have done both beans and mac n cheese and put recipes on here.

    As good as that fatty looks that corn on the cob is driving me nuts. Going to have to check out one of the stores here that has it frozen once in awhile. Not the same as fresh off the stalk but right now not going to be picky that is a long, long ways off. Your an evil man :fistbump:

    Other things to smoke while doing main course is stuffed mushrooms and meatballs wrapped in bacon. Of course customize them with what ever you want.

    Mac and cheese I prefer no boil anymore. Just throw all in a pan with meat above dripping into it -

    I can be lazy at times and prefer no boil, but it does turn out well. Everything goes in the pan no need to cook the noodles first. And you can add whatever you want to it, bacon, ham chunks, crab or lobster etc.

    No boil smoked mac n cheese, my favorite.

    2 1/2 cups of uncooked elbow noodles
    3/4 stick butter
    12 ounces yellow cheddar cheese, shred a brick it melts better and less oil
    4 oz. Velveeta cheese to make it creamier
    5 cup heavy cream
    1/4 tsp garlic powder
    1/4 tsp onion powder
    salt and pepper

    2.5 hours at 240. Careful not to over cook. Stir 3 times toward the end.Helps if you smoke some pork belly burnt ends over the top of them and let the juices drip down into it :anonymous:

    Any time I do beans or mac n cheese always try to have something dripping into them. Usually pork. OK, always pork of some type.

    Speaking of personality- Kylie is constantly herding my wife and the new dog (Ollie). It's funny- she will jump at him when he comes inside and kind of head-butt him til he goes where she wants, then if she sees me watching she will look at me and give an Aussie Grin (which if you don't know what they are, can be alarming)...

    Now I have to do a fatty. I'm thinking it would be stupid not to, as apparently it only takes like 3 hours on the smoke.

    One question- since this is ground meat we need to go to 160, minimum. But since the middle of it is cheese..... how does that affect the probe placement? Just cook the whole damn thing to 160 as you would anything else with ground meat?

    Along similar lines- having a HELL of a time getting my pit probe clean. I know I can't put it in the dishwasher to clean, and even green scrubby pads aren't doing much for it. Just don't sweat it and only use that one for the pit, or what?

    The one that was in the meat cleaned right up.

    Yeah the first couple times she did it I thought she was hackling up on me, which was wierd as we were playing fetch. Then I found out it's a thing. Something about the breed's temperament. -shrugs-

    I usually probe the center so when it heats up to where it needs to be I'm good to go. That and to be honest you can tell by the look of them if it's time. They get a nice mahogany type look to them and just look completely set up. I usually pull them and let them stand in a cold oven for 10 minutes or so. Then I slice, they way everything doesn't just run out of them. I'm sitting here thinking about which ones I want to make this weekend. Will probably do a breakfast fatty, just need to decide on another one, last time I did a philly cheese steak it went over really well.

    Ollie does it too. My favorite breeds are Labs, Goldens, and Aussies tied for first place- followed by anything that isn't a Chihuaha (Evil Rotten Rat Dog). I never met one that wasn't psychotic.

    My sister has one and I call it a football, I just want to punt it. Thing barks so much that they have to have one of those bark collars on it. Now this is going to sound sadistic and evil of me BUT I gotta tell this. We all go camping together once or twice a year, a couple years ago we rented cabins on a lake. We have our golden with us, they brought their football and their American Bulldog (ya pit). Well the pit and our golden love to play together so we are all sitting outside and I had some food on smoking for dinner and we're bs'ing. So their pit and our golden and running around and are barking at each other while playing. All the sudden the football starts yelping, I guess the two others playing and barking started setting off the footballs bark collar and zapping it. My b-i-l and I are freaking dying laughing at this which get's the other two dogs barking more. I'm sure you can see where this is going. Needless to say all of us except my sister found things to be freaking hilarious.
