    From before...

    Chop up bacon and in cold pan




    Cook on med-High heat





    Cook til bacon foam forms and bacon is nice and crispy





    put in bowl with paper towels to drain





    Pour out all but a few Tbsp's of bacon grease... and that fond...





    Add the RBP, Jalapenos, and Onion and saute for a few mins




    Paper towel to drain




    add veggies and bacon to beans, spices, pineapple and rest of ingredients




    stir it up good




    Oh yeah....







    For the Mac, I love the large elbow with the ribs




    Hand shredded cheese.


    1.5 cup Colby 1.5 cup Extra Sharp 4 cups Tilamook medium cheedar




    stick of butter and flour roux with spices





    5 cups 1/2 and 1/2 (cold milk + hot roux = no clumps)




    10 mins stiring on Med-High heat to thicken. Coats Spoon




    add the 4 cups cheese




    stir and add cooked noodles




    1/2 noodles, 1.5 cup cheese and 1/2 bacon




    rest of noodles, cheese and bacon. Top with Rub (PF Spicy here)




    Close up




    And the pork butt... S/P/G base topped with PF Spicy...







    Ready for manana now :thumbsup:





    Can't go wrong with corn! Mexican Street corn. Mayo slathered, Pitfaced (or rub of choice) and cotija cheese. soooo good.

    Whenever I do beans on the smoker I'll pull a can or two worth of the sugar sauce they're shipped with and replace it with whiskey. Much nicer flavor and not nearly as sweet :cheers:

    Usually 3 ish hours. It's all cooked so it's just heating and absorning smoke.

    Unless you do a no boil Mac or raw bacon.

    Really, just sneak a taste every now and then when stirring and see when it hits the profile you're looking for :thumbsup:

    Does a Tail Gate Lock Count?

    Tri Tip is pretty easy to do and always a crowd pleaser:

    Also, for an appetizer, try what is called Pig Candy:

    Smoker at 350ish
    lightly brush bacon with maple syrup
    coat each piece with brown sugar (or layer brown sugar bacon, repeat till about 3 or 4 layers deep)
    smoke for about 30 - 40 min till brown sugar is melted and bacon has crisped up.
    I got this from a class I took at the Woodshed in Orange a while ago.

    Nice looking BBQ by the way!

    Although, this whole lighting the pellets by hand is probably more reliable than that Traeger :laughing:
