Yes it's that easy, jackstands on the frame, floor jack on the axle to raise and lower into place.

Don't be scared of blocks, the majority of lifted trucks out there will have them in the rear. Sure, it'd be nice to always have the 'best' and 'coolest' things in life, but be honest with yourself as far as what you really need. Why waste money on more?

Also, is contacting the seller and asking what shocks they used out of the question?

I change rear shocks without needing to jack up the rear. He should be fine without doing that right?

Since it rides smooth no vibes, why mess with it ? You got lucky you don’t have to deal with it. Why fix when it’s not broken.

Take the chance of what? You leave the truck flat on the ground, unbolt the shock, compress it with your muscles and take it out. Then reinstall the same way.

    Ditto this.
If you want to spend more money on more parts, by all means go for it... but there are plenty on this site perfectly happy with cheap spacer blocks, including myself. The spacers have zero impact on ride quality or wear and tear like some self professed internet mechanics might lead you to believe.

After much consideration I have decided to leave my setup the way it is,final question I have is I want to change out the rear shocks because of how rusted they look, with having the 2inch spacers under my leaf packs would the Bilstein 5100's fit correctly?

5100s should be fine but they max out at 2 inches.

You can also run Bilstein 5125s designed for 2 -3.5 inches of lift.
